With St.Patrick’s Day approaching fast it’s hard to concentrate on anything, except beer. Instead of giving in and camping at a bar, I’m putting my beer brain to work in the kitchen. The first meal that pops into my head is beer can chicken. Then, immediately after that thought, I’m reminded of Mr. Daly’s beer can chicken.
I recently stayed in San Diego with a family called the Dalys. They opened their hearts and kitchen to me for eleven days. Of course the beaches, palm trees, Spanish architecture, and warm weather were unforgettable, but the beer can chicken sticks out too. Why? Mr. Daly's dry rub.
I’ll pass the dry rub recipe onto you and we’ll act as if this is a pre-St. Patty’s day meal since the word beer is attached to it.

Ingredients for the dry rub:
2 tablespoons paprika
2 tablespoons light brown sugar
1 tablespoon chili powder
1 tablespoon kosher salt
1 tablespoon cracked black pepper
2 teaspoon granulated garlic
2 teaspoon granulated onion
1 teaspoon ground cumin
Other Ingredients:
1 (4-5lb) whole chicken
2 teaspoon vegetable oil
1 sprig fresh rosemary leaves
1 large shallot minced
1 lemon, juice of
1 can of beer (your choice)
Since it's almost St.Patrick's day you should use an Irish beer. I'll leave the rest of the choice with you.
You Must drink half the beer while mixing the rub ingredients.

Next, rinse the chicken inside and out with water and pat it dry. Brush the chicken with veggie oil all over. Season the entire chicken, even the inside, with the rub.
When you’re finished drinking the half beer, drop the shallots, lemon juice and rosemary leaves into the beer can. Don’t drink it.
If you have a beer can chicken holder, then that’s great. Place the beer can inside the holder and stick the chicken on top like the picture shows. If no holder, then shove that beer can into the chicken and prop it up somehow so it won’t fall while cooking.
When hot enough, throw the chicken onto the grill and let it get toasted. When waiting, I suggest cracking open another beer. This time, drink the whole beer.
